I'm not sure, but there were news of truckers driving from Europe to China due to COVID-19 restrictions. That's possibly one of the longest distances actually done in real life.
However, such deliveries are rare. Delivery by ship is much more efficient.
My process is the following:
Explore the map. Make sure to explore the city completely. Discover all garages, recruitment agencies and viewpoints as well. After that, move to a location directly north or south of the city (the map rotates based on the location of the player), outside the depicted area.
Set the menu background in Gameplay Settings to "Home at Last", uncheck "Random desktop background theme", and "Desktop fadeout delay" to 5 sec, the minimum. The game saves this setting, it does not have to be done next time.
Make the screenshots. Use the highest zoom level, and hide city names and road numbers using the filter in the bottom left corner. Press F12 when the menu transitions between two backgrounds and fades to black. This allows for clearer images. Cover the whole city by making multiple screenshots. Make sure that there is some overlap between the images.
Import the images. At this point, you will need a photo editing software. I recommend Photopea (photopea.com), a free online Photoshop alternative. Make a new project using File > New, and set the canvas width and height to a size where the map will fit comfortably. (I usually set 5000x5000.) After this, click on File > Open and Place, which will open a file browser. Import all map images from your screenshot folder.
Assemble the map. The screenshots appear on separate layers (on the right side). Select all (except the white background), and set their transparency to 50%. While all are selected, right click on any of them, and click on Rasterize. Move them around to assemble the city map. Make sure that the overlaps match exactly.
Remove the edges & unnecessary parts. The imported maps still have some unnecessary stuff on them (frame, exploration, map filter, zoom icons, white patch in the middle of the bottom). Set the top layer's transparency to 100%, and remove the unnecessary parts by using the selection tool (second one in the toolbar on the left), and pressing Delete. After that, move this layer to the bottom, above the white background. Repeat until all layers are finished.
Merge the layers. If step 5 is done, you can merge the layers. Merge all by right clicking on the top layer, and clicking on "Merge down". Merge all layers into one except the background, which should remain a separate layer. After this is done, go to Image > Trim > OK. This will trim the image to fit the size of the map.
Set up the tools. Right-click on the gradient tool (11th in the left toolbar), and switch it to the paint bucket tool. At the top, change Opacity to 100% and Tolerance to 40. Using the eyedropper tool (6th in the left toolbar), you can pick colours. Click on the magic wand tool (4th in the left toolbar), and set Tolerance to 40. Photopea remembers the Opacity/Tolerance settings, they do not have to be changed again.
Fix the colours. If the city has a coastline/border, use the eyedropper to pick a colour from the centre of the border line. After that, use the magic wand to click on the middle of the line - this will select it. Now click on the paint bucket, and click on the centre of the line. Voila - it is now a single colour. After this, do the same thing for the sea and for the land. Select the colour of the sea/land using the eyedropper, then repeat: magic wand --> select section --> paint bucket --> fill. Make sure to fill every section of the land. Don't forget that the land and the sea are different colours.
Add road icons. For most roads, you can find them on Wikipedia. Even if the given road does not have an article, its sign might exist! Find a road with a similar type. For example, if you are looking for Bundesautobahn A3276, but it doesn't have an article, just open the Wikipedia article of A1, click on its icon, click on "More details", go to the bottom of the page, click on "Diagrams of motorway number signs in Germany", and there they are. You can add the icons by simply copy-pasting them into Photopea. I usually make them 70 px high. You can change their sizes by selecting the layer of the map icon, and then going to Edit > Free Transform. This allows you to change its size by dragging its corner. Some road icons (especially for minor roads) might not appear on the map, but they might appear on road signs in-game. If you can, please add them as well.
Export as PNG. You can do this by going to File > Export As > PNG. After that, open the exported image in Paint.
Add city names and directions. @Technology With Pro and I usually use the font Segoe UI to make city maps. For city names, use the eyedropper tool to select the colour of roads, and use them as text colour for the cities. If there are other towns on the map, which have an entrance sign in the game, add their names as well, but with a smaller size. After that, add directions to the neighbouring cities as well next to the roads. These should have white letters. Optionally, you can add the names of Viewpoints as well - these should be in purple.
Country flags and depot icons (optional). If one of the neighbouring cities is in another country, you could add a flag to mark that they are in a different country. If the city has a depot that is far away from the city centre, you can add an icon pointing towards it as well.
Upload the map to the wiki.
That's it. I'm curious whether @Technology With Pro does something differently, though. :-)

The IPA is the International Phonetic Alphabet, a script used to describe how things are pronounced in different languages. Each character represents a sound you can make.
For example, Budapest is written in the IPA as [ˈbudɒpɛʃt] and Sheffield is written as [ˈʃɛfiːld]. Notice the ʃ character - it is used to describe the sound that is written in English as 'sh'. (Budapest is pronounced in Hungarian as 'Budapesht'.) In the IPA, the different ortography does not matter, as long as two sounds are pronounced the same, they are spelled the same, even in different languages.
I'm not sure I can explain the other suggestion in more detail. If you start a profile in English, the map will display Cologne, Munich and Rome instead of Köln, München and Roma. Before 1.33, the map did display Köln, München and Roma because the localised place name functionality was not in the game yet. However, now, localised place names are the default - if you start a new profile in English, your map will show Cologne, Munich and Rome. As this is the default setting of the game, I'm suggesting we follow this on the wiki and use the English names.

The pronounciation guide might be a good idea, but it might be easier to just include the IPA phonetic transcription.
On the other hand, it might be time to revise the naming policy. When it was made, there was no option yet to use localised place names. However, since then, the game displays names in the chosen UI language for new profiles. Localised place names are the default in the game now - maybe it's time for the wiki to change as well?

For Heart of Russia, we used Euro Truck Simulator 2: Unnamed 8th Map Expansion when the first images showed up. However, this time, we are not 100% sure that this will be after HoR - it could be (though unlikely) the second one after it.
The options I see are Euro Truck Simulator 2: Unnamed Western Balkans Map Expansion; Unnamed Map Expansion; "balkans2" Map Expansion (maybe just "Balkans 2"?).

We had a discussion (and another one) about this when VlF and Italia came out, and we decided to make metropolitan area AND city proper articles for Paris and Milano.
Since then, the game has changed a lot. There are tons of cities that could get a city proper and a metropolitan area article, including quite small ones, such as Hunedoara.
I would prefer to stay consistent, so what do you think? Should we make more city proper pages, or merge the two articles for Paris and Milan?
Even though there is still a lot to improve on what we already have, I've also thought about what we don't have - wiki pages for mod information.
Currently, we only have pages about the mods itself, but not about their contents. (E.g. we have pages about ProMods or Grand Utopia, but not about the cities and roads in them.)
What do you think about adding such pages for the mods, IF (and only if) it is clearly labelled that the article is talking about mod content?

I think some more explanation on how the icon extraction from the .scs files can be done would be useful on the image guide.
Also, I don't necessarily agree with the naming order, as it's slightly unintuitive to me. I think the game should come first, and then the others.
Other than that, nice work.
As no more comments arrived in the last two and a half days, I'll do exactly that.
Yeah, it's entirely possible that the cities will be slightly more spaced out than in real life due to the scale limitations. I would suggest adding the cities in the achievement list to the Iberia page - we can still delete it if we are proven wrong.
I'm not quite sure - there are some strange inclusions of towns/villages...
Some examples I find odd:
Bailén and Mengíbar, small towns right next to each other.
Central Portugal is also quite dense with villages like Corticadas and Ponte de Sor
Villarreal and Sagunto right next to Valencia.
